Es originario de<em><strong> Ensenada, <\/strong><\/em>tierra donde la comida se cultiva, se pesca y se honra. Viene con todo el bagaje de haber cocinado en lugares como <em>Pujol, Biko, Le Chique y Arca<\/em>, o sea, lugares top, pero sin perder esa esencia de fog\u00f3n y respeto por el producto. En Malva, enclavado en el <strong>Valle de Guadalupe<\/strong>, todo eso tiene sentido. La tierra, los productos locales y la temporalidad mandan, y \u00e9l solo los traduce en platos que nutren, emocionan y cuentan historias. Porque <em>cocina con ra\u00edces<\/em> tambi\u00e9n es cocinar con coraz\u00f3n.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Una etapa con alma<\/h4>\n\n\n\n<p>Por otro lado, esta no es la primera vez que Carlos pisa Malva. Ya hab\u00eda formado parte del equipo cuando fue nombrado el <strong>Mejor Nuevo Restaurante de M\u00e9xico<\/strong> por los Gourmet Awards. Ahora regresa con m\u00e1s experiencia, pero la misma pasi\u00f3n.
