El dise\u00f1o \u2013hecho por Ezequiel Farca Studio\u2013 juega con piedra volc\u00e1nica y madera c\u00e1lida, como si estuvieras en una cueva submarina elegante. El chef te explica que es para abrir el apetito y predisponer los sentidos. Puedes probar desde perfiles dulces y semidulces hasta secos y semisecos, y con cada sorbo entiendes que aqu\u00ed nada es casualidad; todo tiene un prop\u00f3sito.<\/p>\n\n\n\n<p class=\"p1\">El primer bocado es inesperado: una ensalada de papa estilo japon\u00e9s con salsa tonkatsu. Simple, reconfortante, pero con un punch umami que te engancha. El chef utiliza t\u00e9cnicas como el Edomae tradicional o el aburi (un flameado ligero) que libera aromas ahumados irresistibles. Aqu\u00ed no hay show innecesario; hay respeto, equilibrio y un amor profundo por el producto.
