En Oaxaca, uno de esos destinos es Entre Sombras, el restaurante que se ha convertido en uno de los secretos mejor guardados de Casa Santo Origen.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Lejos del bullicio del centro hist\u00f3rico y rodeado por una atm\u00f3sfera de calma absoluta, este proyecto gastron\u00f3mico liderado por&nbsp;Blanca De la Mora&nbsp;y&nbsp;Mario Zumar\u00e1n&nbsp;construye una narrativa culinaria donde las ra\u00edces oaxaque\u00f1as dialogan con influencias mediterr\u00e1neas, t\u00e9cnicas contempor\u00e1neas y una filosof\u00eda basada en el respeto por el producto.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">El resultado es una cocina elegante, pero sin pretensiones. Sofisticada, pero profundamente cercana.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Entre Sombras Oaxaca: una cocina que celebra el origen<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">La esencia de Entre Sombras parte de una idea sencilla pero poderosa: dejar que los ingredientes hablen por s\u00ed mismos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Aqu\u00ed, los vegetales org\u00e1nicos provenientes de los Valles Centrales, los pescados frescos de la costa oaxaque\u00f1a y las hierbas cultivadas en huertos cercanos son los protagonistas de una propuesta que privilegia la temporalidad y la trazabilidad.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Adem\u00e1s, gran parte de los procesos ocurren dentro de la propia cocina. El pan se hornea diariamente, las pastas se elaboran de manera artesanal y cada preparaci\u00f3n busca resaltar texturas y sabores naturales sin recurrir a excesos.<\/p>\n\n\n\n<figure Hidalgo proveniente de fincas locales, elementos que fortalecen la conexi\u00f3n entre la cocina y el territorio.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">M\u00e1s que una tendencia gastron\u00f3mica, esta filosof\u00eda responde a una nueva forma de entender el lujo: aquella donde la autenticidad vale m\u00e1s que cualquier artificio.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Entre Sombras Oaxaca: del desayuno al postre, una experiencia completa<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Desde las primeras horas del d\u00eda, el restaurante despliega una propuesta que convierte el desayuno en un ritual.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Los aromas de caf\u00e9 reci\u00e9n molido, panader\u00eda artesanal y reposter\u00eda reci\u00e9n horneada acompa\u00f1an especialidades como los chilaquiles con mole negro y pork belly, los chilaquiles blancos con camar\u00f3n salteado o los huevos preparados con ricotta y Entre las entradas destacan el tartar de at\u00fan con aceite de trufa, las croquetas de jam\u00f3n serrano y los tacos de camar\u00f3n y jaiba de concha suave.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ahora bien, es en los platos fuertes donde la personalidad de la cocina se expresa con mayor fuerza. El pescado envuelto en hoja santa, el pulpo a la brasa con salsa harissa, las costillas cocinadas durante doce horas o la pasta con salm\u00f3n ahumado y pistache muestran una propuesta capaz de viajar entre distintas tradiciones culinarias sin perder identidad.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">En realidad, los postres terminan de consolidar la experiencia. La tarta vasca con pistache, el frangipane de almendra y la tarta Barozzi reinterpretan cl\u00e1sicos europeos con una sensibilidad contempor\u00e1nea que mantiene el equilibrio entre t\u00e9cnica y placer.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Gastronom\u00eda de destino en una Oaxaca cada vez m\u00e1s sofisticada<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">La escena gastron\u00f3mica oaxaque\u00f1a vive uno de sus momentos m\u00e1s interesantes.
