Est\u00e1 dividida en dos partes: una, el saber de d\u00f3nde viene todo lo que comemos, y la otra, en comprender c\u00f3mo funciona nuestro cuerpo y mente. Por eso trabajamos con huertos y ranchos locales. La mayor\u00eda de nuestras prote\u00ednas, hortalizas y hongos son de origen org\u00e1nico y agroecol\u00f3gico. La idea es que las personas puedan conocer c\u00f3mo funciona su cuerpo y mente. Este estudio divide al ser humano en diferentes tipos de personalidad seg\u00fan el sistema endocrino. Cada tipo de personalidad est\u00e1 asociado a una gl\u00e1ndula maestra y, con base en eso, dise\u00f1amos el men\u00fa. Esto nos permite ofrecer platos que pueden equilibrar y mejorar la energ\u00eda del cuerpo seg\u00fan las necesidades individuales.<\/p>\n\n\n\n<p>El men\u00fa est\u00e1 dise\u00f1ado para seis tipos de energ\u00edas, y con eso podemos jugar de distintas maneras. Por ejemplo, si alguien llega cansado y tiene una reuni\u00f3n importante, podemos recomendar algo que active sus gl\u00e1ndulas suprarrenales y tiroides, para darles energ\u00eda y mejorar su quema cal\u00f3rica. La administraci\u00f3n est\u00e1 muy enfocada en el bienestar, y muchas de sus capacitaciones giraban en torno al autoconocimiento y la meditaci\u00f3n. Esto me llev\u00f3 a investigar m\u00e1s sobre la semiolog\u00eda y c\u00f3mo podemos aplicar esos principios a la cocina. Antes de Xian, llev\u00e9 esta idea a un restaurante en la Condesa, donde logr\u00e9 crear equipos de trabajo equilibrados basados en estos principios. En \u00e9l, los comensales pueden aprender sobre cada arquetipo y descubrir cu\u00e1l es el suyo. Empiezan a interesarse en el tema de las energ\u00edas y terminan en una especie de \u201cterapia de pareja\u201d. Al comprender sus propias energ\u00edas y las de su pareja, logran una empat\u00eda especial. A menudo se dan cuenta de que han elegido a alguien que complementa su energ\u00eda o que cubre una \u201chuella de abandono\u201d de figuras paternas ausentes.
